The Mattinglys have been farming the land in the hills of Barren County, Kentucky, since 1976 and producing cheese from their own cows since 1998. Founded by Kenny Mattingly, the farm produces make several styles of cheese, from its classic Cheddar and Gouda to more unique signature varieties.
